Baking Time Adjustments
Baking time doesn't scale linearly. When doubling a recipe, increase baking time by about 25-50%, not double. Check doneness early and adjust as needed.
Pan Size Changes
When doubling a recipe, you may need to use a larger pan or multiple pans. A doubled cake recipe might need a 9x13" pan instead of two 9" rounds.
Spices and Seasonings
Strong spices and seasonings (salt, pepper, cayenne) often don't need to scale proportionally. Start with less and adjust to taste.
Leavening Agents
Baking soda and baking powder should be scaled carefully. For recipes tripled or more, use slightly less than the calculated amount.
